Well, they are the Pickled ones but they are colored and yummy to.
Very easy to make... here's how I do it
2 Cans Beets
1 Dozen Hard Boiled Eggs peeled
1 Large Onion sliced
Cider Vinegar
Sugar
Drain Beets (save the Beet juice), measure to see how much beet juice you have, usually about 1 1/2 Cups. Pour into medium saucepan and add equal amounts of vinegar and sugar. (Equal to your beet juice measurement)
Bring to a boil over medium heat and let cool. Layer your Beets, Eggs and Onions in a big ole mason jar. Pour cooled liquid to fill jar. Let sit in fridge for about 3 - 4 days (waiting to eat'm is the hardest part) Enjoy....
Yesterday, Maygan went to a Cheerleading Clinic in the morning, oh she had a blast! The kiddos where so cute during their performance, seeing the 5 yr olds cheer made my day. So, for the last 24 hours I have been listening to "Mom, watch this" Rah, Rah sis boom bah, LOL... love it!
When we got home I had an itchin' to do some handstitchin' and made a couple of Penny Mats and a Pillow. Just put them on my selling blog if you want to peek..
Now I'm headed out to the woodshop, hubby is working on another Native American Flute today and I've gotta make a Blanket Crane.. we'll see if there's enough room for the both of us, LOL..

ReplyDeleteOh, I love pickled eggs and beets. Can't have them right now as the beets are too high in carbs...can have the eggs though. But they look so yummy.
Oh little girls, we only had boys, but I bet she was too cute doing her cheers!
